Ingredients

  • 3 lbs (1.4 kg) beef chuck roast, cut into large chunks

  • 1 onion, quartered

  • 4 cloves garlic, peeled

  • 3 dried guajillo chilies, stemmed and seeded

  • 2 dried ancho chilies, stemmed and seeded

  • 2 dried pasilla chilies, stemmed and seeded

  • 2 bay leaves

  • 1 tablespoon dried oregano

  • 1 tablespoon ground cumin

  • 1 tablespoon smoked paprika

  • 1 teaspoon ground cloves

  • 1 teaspoon ground cinnamon

  • Salt and pepper to taste

  • 4 cups (946ml) beef broth

  • 2 tablespoons vegetable oil

  • Corn tortillas

  • Chopped onion and cilantro

  • Lime wedges

  • Salsa or hot sauce of your choice

Directions

  • In a large pot, combine the beef chunks, quartered onion, garlic cloves, dried chilies, bay leaves, oregano, cumin, paprika, cloves, cinnamon, salt, and pepper.
  • Pour in the beef broth until the ingredients are fully submerged. Bring the mixture to a boil over medium-high heat.
  • Once boiling, reduce the heat to low, cover the pot, and simmer for 3-4 hours, or until the beef is tender and falls apart easily.
  • Once the beef is tender, remove it from the pot and shred it using two forks. Set aside.
  • Using a slotted spoon, remove the onion, garlic, chilies, and bay leaves from the pot, leaving behind the broth.
  • Heat vegetable oil in a skillet over medium heat. Add the shredded beef to the skillet and cook until browned and slightly crispy, about 5-7 minutes.
  • Meanwhile, strain the broth to remove any solids and return it to the pot. Bring the broth to a simmer.
  • Dip each corn tortilla into the simmering broth for a few seconds to soften it, then transfer it to a separate plate.
  • Place a portion of the shredded beef onto each tortilla and fold it over to form a taco.
  • Serve the Birria Tacos hot, garnished with chopped onion, cilantro, a squeeze of lime juice, and salsa or hot sauce on the side.
